roast your veggies. do not steam. except for carrots, those are great for steaming.
broccoli, squash, cauliflower and a little onion. season lightly with salt & pepper and lightly drizzle olive oil.
while roasting, get your rice going.
i use 3 cups rice, 6 1/2 cups water. makes a lot, but this is easy to reheat and keep eating. i also throw in a cup of butter on top to melt while cooking.
while that is cooking, make your meat.
this can be brined chicken on the grill or ground meat in a skillet. anything goes. season lightly.
once done, throw it all in a bowl; rice, meat, veggies. serve with a boiled egg, cup of blueberries, sliced avocado half, and milk or smoothie.
-the easy part i guess is leftovers when everything has already been made. but honestly, this is a pretty simple dish.
